Inserts pans of raised dough in oven to bake, using peel. Adjusts drafts or thermostatic controls to regulate oven temperature. Removes baked goods from oven and places goods on cooling rack. May bake pies, cakes, cookies, and other pastries [COOK, PASTRY (hotel & rest.)].
