The Carlyle, A Rosewood Hotel is currently recruiting for a Chef de Cuisine to join a team of chefs dedicated to crafting the freshest of ingredients into innovative dishes creating a chic dining experience for our guests.
The Chef de Cuisine will be accountable for the quality, consistency and production of the kitchen through the coordination of menus, purchasing, staffing and food preparation for the hotel's iconic outlets including The Carlyle Restaurant and Café Carlyle.
Essential Duties and Responsibilities
Develops, designs, or creates new applications, ideas, relationships, systems, or products, including artistic contributions.
Supervises kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures and develops seasonal menus with costings plating guides and food taste panels.
Supports the hotel philosophy concerning hiring, employee relations, coaching, training and evaluations.
Ensures compliance with all applicable laws and regulations
Follows proper handling and right temperature of all food products.
Estimates daily production needs.
Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
Understands the impact of kitchen operation on the overall property financial goals and objectives and manages to achieve or exceed budgeted goals.
Sets and supports achievement of kitchen goals including performance goals, budget goals, team goals, etc.
Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the customers on a daily basis.
Assists as needed in the interviewing and hiring of employee team members with appropriate skills.
Models the company’s culture, vision, mission and core values at all times.
Foster and promote a cooperative working climate, maximizing productivity and employee morale.
Ability to enforce hotel's standards, policies and procedures with all kitchen personnel
Be a clear thinker, remaining calm and resolving problems using good judgement
Maintain confidentiality of guest information and pertinent hotel data
Prior heavy exposure to culinary
Must ensure sanitation and food standards are achieved.
Thorough knowledge of kitchen productivity
Ability to be resourceful, creative and maintain flexibility
Must be able to exert physical effort in transporting 50 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding
High school diploma /GED or2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management
Licenses & Certifications: New York City Food Safety Certification or Equivalent Food Safety Certification
*New York City Certification is a Local Law Requirement
Minimum Six years overall culinary experience with at least two years in a Chef de Cuisine position in a Five Star luxury or ultra-luxury hotel or restaurant, preferably in a union environment

Caroline Rose Hunt is one of Dallas' leading ladies from her business ventures to her philanthropic efforts. She has been the guiding spirit behind The Rosewood Corporation, a family owned company with diverse worldwide operations and investments, formed in 1976. Caroline has worn many hats in her lifetime including author, traveler, gourmet, entrepreneur, philanthropist, mother of five, grandmother of nineteen, and great-grandmother of seventeen. Of all her worldwide accomplishments and honors, she is most proud of her children and her family. Since 1980 with the opening of The Mansion on Turtle Creek, Rosewood became synonymous with the very best in luxury accommodations. Amenities for the hotel in London led to her creation of Lady Primrose's, Inc. an entire company devoted to luxury bathing and skin products. Her antiques emporium and tea room, Lady Primrose's Shopping English Countryside, was named the best spot for tea in the US by the British Tea Council. Always in love with words, in 2000 she published her first novel Primrose Past: The 1848 Journal of Young Lady Primrose. She supports the Retina Foundation of the Southwest, the Junior League of Dallas, the Texas Council of the National Museum of Women in the Arts, the Tiffany Circle of the Red Cross, Celebration of Reading, Heritage Foundation, Crystal Charity Ball, Charter 100, The Dallas Woman's Club, as well as numerous non-profits and arts groups. For ten years she served as a Trustee of the John F. Kennedy Center for the Performing Arts in Washington, DC.
