The Baker partners with the Mixer to put dough into the extruder, assures that the dough is stretched, dusted, sized, cut, raised, baked/toasted and sent to the next phase of production. This important role greatly influences the quality of the products. All procedures and practices used are grounded in standards, regulations and laws addressing food safety and food quality, as well as environmental safety in accordance with Safe Quality Food (SQF) and Good Manufacturing Practices (GMP).This list of duties and responsibilities is not all inclusive and may be expanded to include other duties and responsibilities as deemed necessary. 1. Maintain understanding of production schedule for each shift and how it influences the work to be done2. Understand equipment being used as well as basics of the dough being mixed3. Understand the baking process in great detail and adjust machines appropriately to assure an excellent process and results4. Identify problems with the dough through knowledge of formulas/recipes, correct ingredients to be used, including water, and understands how water, temperature and humidity affects the dough and uses that information to communicate promptly with the mixer to improve the dough formula for baking5. Monitor equipment for safety and performance including: extruder, nozzles, dusters, scales, belts, ovens, conveyors, cutting belts and blades6. Monitor baked products for texture, consistency, rising, color and baking/toasting effectiveness7. Support and assure the implementation and monitoring of food safety and food quality standards, regulations, laws and good manufacturing practices and communicate concerns or opportunities for improvement8. Keep work environment clean, safe and support continuous improvement9.
