Concordia University is a growing university with a campus in vibrant North East Portland, Oregon. **MEMBERS ONLY**SIGN UP NOW***. services provided include Resident Dining, Retail, Catering, Conference and Facility Setup. This location will be undergoing an operational transformation in the coming year that will provide a cutting edge facility capable of providing an excellent dining experience to our customers.
The ideal candidate will have the following preferred skills/experience:
-previous culinary experience in high volume environment - Campus dining preferred.
-Extraordinary communication skills – to be the “face of **MEMBERS ONLY**SIGN UP NOW***. culinary services”, approachable, able to manage change and the ability to lead/mentor existing culinary staff to a higher level.
-Strong culinary skills and experience managing the culinary operations of a high volume, multiple venue account – including creativity in high end catering.
-Great people skills – easy interactions with client, faculty, staff, students.
-Knowledgeable and passion about sustainable practices including farm to fork and sourcing local products
-Experience creating and costing menus including specialty menus for catered events
-Use of Online Food Management Systems for ordering, inventory and costing.

Position Summary
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements:
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
