Marine Corps Community Services (MCCS) is looking for the best and brightest to join our Team! This position is located at the CLUBS AND CATERING DIVISION. Candidates selected for this position will serve as an EXECUTIVE CHEF for MCCS.
KEY REQUIREMENTS
DUTIES:
Primary function is to plan, direct, and coordinate food management activities at the various clubs and snack bars within the Clubs & Catering Division. Advises and supports club managers, chefs, and cooks in areas such as menu planning, development, cost controls, sanitation, food presentation and employee training. Supervises, directs, assists, and participates in the preparation and cooking of food items. Supervises activities to ensure economical, efficient, and profitable food services. May prepare the budget for the food service operations and submit for approval. Prepares and cooks meats, soups, vegetables, special dishes, sauces, gourmet dishes, and other food. Prepares or directs the preparation of complex salads and desserts. Regulates cooking temperatures, season's food as appropriate, etc.
Works under the general supervision of the Clubs & Catering Director. Develops standardized recipes and food specifications. Coordinates food service for protocol functions and coordinates control mechanisms to maximize labor efficiency and minimize expenses related to food service operations. Estimates consumption of, and places orders for, foodstuffs and other operating supplies, as well as establishing stock levels. May contact vendors and compare prices and quality, assuring the best prices are maintained to benefit club operations resulting in low cost of goods, which will provide a high gross profit. Inspects deliveries for quantity and quality, ensuring the proper receipt and storage of stock. Establishes controls to prevent pilferage, spoilage, waste, or misuse in food preparation and storage areas. Responsible for making decisions as problems arise, and establishing high standards for overall food service operations. Inspects premises and employees for compliance with sanitation and personal hygiene standards; responsible for the cleanliness and maintenance of the kitchen, its equipment, dish washing tasks, directing subordinates in cleaning all galley equipment, appliances, utensils, work and storage areas.
Supervises employees to include: assigning and distributing work, coaching, counseling, tutoring, and mentoring employees; approving and disapproving leave, recommending and completing personnel actions, disciplinary actions, completing performance reviews, signing timecards, training employees, keeping abreast of and actively supporting the principles of the EEO program, and prevention of sexual harassment. Must be alert to alcohol abuse, and take appropriate action.
Provides World Class Customer Service with an emphasis on courtesy. Assists customers and communicates positive in a friendly manner. Takes action to solve problems quickly. Alerts the higher-level supervisor or proper point of contact for help when problems arise. Ensures implementation of an activity safety program in accordance with the Base Safety Program. Advise employees of available safety regulations, instructions, materials, and equipment. Promptly reports workplace accidents/injury to the Human Resources Office. Ensures that safety training is provided to employees. Complies with OSHA standards and takes action to correct unsafe or unhealthy working conditions. Ensures employees understand safety infractions that can result in disciplinary actions, and follows through with appropriate action. Ensures minimal loss of duty by complying with “Return to Work” program initiatives, and following up on employee well-being. Interacts with guests during events and assists with sales effort as required. Must be one of the key faces within the Clubs as well as Marine Corps Community Services. Performs other related duties as assigned.
QUALIFICATIONS REQUIRED:
Minimum Qualifications:

Minimum of two year culinary arts degree, with three years' experience, one year at supervisory level. Prefer individuals with Certified Executive Chef (CEC) or Certified Chef de Cuisine (CCC) certification that have a strong Hotel, Conference/Convention Center, and/ or Contract experience. Professional knowledge and experience in the principles, practices and procedures of food management of a multi-facility food operation. Experience as a chef in a full service restaurant using a variety of food preparation techniques, recipe specifications and development. Ability to perform routine management functions such as planning, scheduling, maintaining records/reports, and coordination of the Club’s food services, demonstrating a thorough knowledge of basic principles, techniques, and practices required for a successful operation. Possess general knowledge of prices, dietetics, grades of food, and meal planning. Knowledge and ability to skillfully apply new methods in managing food service and equip employees for expert performance in the occupation. Ability to supervise and train personnel in preparation and serving of food, as well as supervision of all other mess operations and services. Must be thoroughly familiar with sanitation and proper food protection procedures. Must have the ability to communicate effectively both orally and in writing. Must be effective in dealing with high level dignitaries from all military branches, as well as local, state, and federal agencies. Must have the ability to manage multiple operations covering contract feeding, ala-carte operations, and banquet experience to include breakfast, lunch, dinner, and reception and meeting breakout services. This is a mixed position where the incumbent must be able to lift and carry objects up to 45lbs independently and objects over 45lbs with assistance.
