Executive Chef Job Description

We have an exciting opportunity for an experienced Executive Chef at Sharp Mesa Vista Hospital San Diego, California. Sharp Mesa Vista Hospital is the largest privately operated psychiatric hospital and the premier provider of psychiatric and chemical dependency services in San Diego County. Sharp Mesa Vista provides a full continuum of behavioral health services designed to care for specific patient populations, including children, adolescents, adults, and older adults. Services include inpatient, outpatient, and partial hospital programs, as well as chemical dependency detoxification and rehabilitation services. The hospital also provides partial hospitalization and outpatient programs at satellite campuses within the community. Our food service operations include a cafeteria, satellite dining areas and catering. We also provide food services for patient dining. The Executive Chef reports to the General Manager and is responsible for the food production management with emphasis on the Food Management Systems. Responsibilities include: Updating recipes for retail and patient dining
Developing production sheets and managing production records
Menu planning, purchasing and inventory
Provide supervision and coaching to 25 culinary staff
Preferred qualifications include a culinary degree (CEC desirable) prior experience in a healthcare environment. Knowledge of Joint Commission and CMS requirements preferred. Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
