**MEMBERS ONLY**SIGN UP NOW***. is seeking an Executive Chef 2 at Drexel University is a premiere institution located in Philadelphia, PA. The catering occurs in a variety of locations on this large campus located in West Philadelphia. The clients and customers are very demanding and look for a program that is competitive with the best caterers in the city. The volume is $3.5 to $4M and is primarily executed according to an off-premise caterer strategy with the majority of events occuring away from the kitchen. Knowledge in holding and delivering food under these circumstances is a must. This is a union environment, however we have a scale that allows us to hire the best talent as all employees in the department must conduct a successful presentation and production of food from a market basked. The pace is fast and the pressure to serve a multitude of events from cold breakfast to large events and from high end receptions to box lunches is dynamic. The environment requires someone who thrives under pressure and who sees obstacles as challenges which can be overcome. There is high client exposure and recognition for the right person who wants to be part of a very high performing team in this $21m and growing showcase account. Position Summary
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements:
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
