for The Sage Colleges in Albany, NY
, a small co-ed campus in an historic section of the city. This campus is part of a larger institution with a nearby women's campus, evening and graduate program. Profit & Loss account with resident dining, retail, and catering. Team of 2 on-site managers (Retail Manager III and Chef Manager) report to General Manager and interact with 2 managers from the women's campus to meet and exceed client needs for the total institution. This campus offers a unique, integrated resident dining and retail operation including regional and national brands with a satellite library café and catering. Ideal candidate has sophisticated communication skills for positive daily client and customer interactions in addition to strong kitchen production skills, experience with production forecasting, menu management, purchasing and inventory management, and demonstrated successes in high end catering production. Position requires extended periods of time standing and walking. The campus is historic, and as such has few elevators and/or ramps. Heavy lifting and significant physical labor is involved in this position. Fluency in Spanish and/or Arabic, although not required, would be helpful in this position. This is a 10 month per year position with an opportunity for a lay off or work at the summer camp - typical shift varies by day with hours scheduled between 7am - 9pm and may include some weekend and holiday coverage. **MEMBERS ONLY**SIGN UP NOW***. Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Chef or Food Production Manager. Reports to GM.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
