Start time is usually between 2:00 PM and 3:00 PM
The pasta cook will perform a variety of duties including but not limited to cooking pasta/rice using prepared formulas, assembling machine parts, reviewing requisitions and batch sheets, performing sheer tests and yield tests on pasta ensuring target specifications required numbers are met and according to instructions in a timely manner, inspection of work enviroment including equipment adjustments as neccessary, ensuring good housekeeping and 5S standards are met.
Communicate with production leads on paste/rice quality, amount needed, and timing. Check equipment before use to ensure setup is complete (e.g., guards are in place, belts and augers are assembled and sanitized, ect.) Assemble cleaned machine parts and set controls to proper pasta mix settings. Review requisition and batch sheets to ensure all items and quantities received are correct. Preform daily scale audits. Verify temperatures, ratios, and set points match the batch sheeet. Perform pasta sheer tests and yield tests ensuring they meet target specifications and required numbers. Complete daily centerline matrix. Clean Machine parts, tools, utensils and work area. Ensure good housekeeping and 5S standards are met. Complete all required paperwork. Perform sanitary checks on equipment to be used. May perform general labor duties as assigned. May perform other duties as assigned.
Knowledge of GMP's and food allergens. Ability to be HACCP Certified, PIT Certified, and LOTO Certified. Ability to identify Critical Control Points (CCP). Ability to read a thermometer. Knowledge of the 5S concept. Mechanical aptitude. Ability to work with pork, chicken, beef, and shelfish products in addition to many other ingredients and allergens.
